A quick and easy recipe for seared wahoo topped with zesty mango salsa.
Ingredients

- 2 wahoo fillets
- Salt to taste
- Pepper to taste
- 1 tsp smoked paprika (optional)
- 1 ripe mango, diced
- 1/2 red onion, diced
- Juice of 1 lime
- 1/4 cup chopped cilantro
- Jalapeno or sriracha (optional, for spice)
Instructions
- Pat the wahoo fillets dry and season with salt, pepper, and smoked paprika if desired.
- Heat a pan over medium-high heat until hot.
- Place the fillets in the pan and sear for about 2-3 minutes on each side, or until golden brown.
- While the fish is cooking, prepare the mango salsa by combining diced mango, red onion, lime juice, chopped cilantro, and jalapeno or sriracha if using.
- Top the cooked wahoo fillets with the mango salsa and serve immediately.
Notes
Make sure to pre-make the salsa to avoid overcooking the fish. Don’t touch the fish while searing for the best results.
