Description

A fresh and vibrant salad combining succulent shrimp with crispy bacon, creamy avocado, and tangy blue cheese, perfect for a light meal or side dish.

Ingredients

Scale
  • 1 lb shrimp, peeled and deveined
  • 4 cups mixed greens (such as romaine, spinach, and arugula)
  • 4 slices bacon, cooked and crumbled
  • 1 ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup blue cheese, crumbled
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat. Season the shrimp with salt and pepper, then grill for 2-3 minutes on each side until they are opaque and cooked through.
  2. In a large bowl, combine the mixed greens, avocado, cherry tomatoes, bacon, blue cheese, and red onion.
  3. In a small bowl, whisk together the olive oil and lemon juice, then season with salt and pepper.
  4. Drizzle the dressing over the salad and toss gently to combine.
  5. Top with grilled shrimp and serve immediately.

Notes

Serve chilled or at room temperature. For best freshness, keep the dressing separate until ready to eat.
