Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup coconut milk
  • Zest of 1 lime
  • Juice of 1 lime
  • 1 cup powdered sugar
  • 1/2 cup unsalted butter, softened (for frosting)
  • 12 tablespoons coconut milk (for frosting)
  • Additional lime zest for decoration

Instructions

  1. Preheat the oven to 350°F (175°C). Line a cupcake pan with cupcake liners.
  2. Mix flour, baking powder, and salt together in a bowl.
  3. Cream the softened butter and sugar in another large bowl until fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture, alternating with the coconut milk. Stir in lime zest and juice until just combined.
  5. Divide the batter evenly into the prepared cupcake liners, filling each about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Let cool completely.
  7. Beat the softened butter for the buttercream until creamy. Gradually add powdered sugar and coconut milk until smooth and fluffy.
  8. Frost the cooled cupcakes with the coconut lime buttercream and top with additional lime zest. Enjoy!

Notes

For a stronger lime flavor, add more lime juice or zest. Consider adding shredded coconut to the batter for a fun twist.
