Description

A quick and tasty tuna pasta salad combining pasta, tuna, and fresh vegetables, perfect for lunch or a light dinner.


Ingredients

  • 8 ounces pasta (e.g., rotini or penne)
  • 1 can (5 ounces) tuna, drained
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup frozen peas, thawed
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and rinse it under cold water to cool.
  2. Combine the cooled pasta, tuna, cherry tomatoes, cucumber, red onion, and peas in a large bowl.
  3. Whisk together mayonnaise, Dijon mustard, lemon juice, salt, and pepper in a small bowl.
  4. Pour the dressing over the pasta mixture and toss to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving. Enjoy!
