  • 8 oz Pasta (rotini or penne)
  • 1 can Rotel Tomatoes (original diced tomatoes with green chilies)
  • 1 lb Ground Beef (lean)
  • 1 cup Sharp Cheddar Cheese
  • 1 cup Monterey Jack Cheese
  • 1 Bell Pepper (chopped)
  • 1 Onion (chopped)
  • 1 tsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Garlic Powder
  • 1 tsp Salt
  • 1 tbsp Olive Oil

Instructions

  1. Boil a large pot of salted water. Add your pasta and cook according to the package instructions until al dente. Drain and set aside.
  2. Heat a tablespoon of olive oil in a large skillet over medium heat. Add chopped onions and bell peppers. Sauté for about 5 minutes, or until they become soft and fragrant.
  3. Push the veggies to one side of the pan and add the ground beef to the other side. Cook until browned, breaking it apart with a spoon, about 6-8 minutes.
  4. Stir in the Rotel tomatoes, chili powder, cumin, garlic powder, and salt. Let it simmer for about 5 minutes, allowing the flavors to meld together.
  5. Add the cooked pasta directly into the skillet. Stir to combine everything thoroughly. Gradually sprinkle in the cheese, stirring until melted and creamy.
  6. Serve hot and garnish with fresh cilantro or additional cheese if you like!
