- 8 oz Pasta (rotini or penne)
- 1 can Rotel Tomatoes (original diced tomatoes with green chilies)
- 1 lb Ground Beef (lean)
- 1 cup Sharp Cheddar Cheese
- 1 cup Monterey Jack Cheese
- 1 Bell Pepper (chopped)
- 1 Onion (chopped)
- 1 tsp Chili Powder
- 1 tsp Cumin
- 1 tsp Garlic Powder
- 1 tsp Salt
- 1 tbsp Olive Oil
Instructions
- Boil a large pot of salted water. Add your pasta and cook according to the package instructions until al dente. Drain and set aside.
- Heat a tablespoon of olive oil in a large skillet over medium heat. Add chopped onions and bell peppers. Sauté for about 5 minutes, or until they become soft and fragrant.
- Push the veggies to one side of the pan and add the ground beef to the other side. Cook until browned, breaking it apart with a spoon, about 6-8 minutes.
- Stir in the Rotel tomatoes, chili powder, cumin, garlic powder, and salt. Let it simmer for about 5 minutes, allowing the flavors to meld together.
- Add the cooked pasta directly into the skillet. Stir to combine everything thoroughly. Gradually sprinkle in the cheese, stirring until melted and creamy.
- Serve hot and garnish with fresh cilantro or additional cheese if you like!
