Description

Ingredients

  • 4 pieces Chicken (bone-in, skin-on)
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Paprika
  • 1/2 cup Honey
  • 1/4 cup White Wine
  • 1 medium Onion
  • 2 pieces Fresh Lemons
  • 1/2 cup Nicoise Olives
  • 2 tablespoons Cilantro or Parsley

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Sauté olive oil in a Dutch oven over medium-high heat. Add onions and cook until golden brown, then set aside.
  3. Season chicken pieces with salt, pepper, and paprika. Brown them in the same pot for 5-7 minutes, then set aside.
  4. Layer cooked onions in a roasting pan, then place chicken skin-side up on top.
  5. Smear honey generously over chicken pieces. Mix leftover honey with white wine and bring to a boil to create a glaze.
  6. Pour the honey-wine mixture over chicken, then add lemon slices and olives.
  7. Bake uncovered for about 40 minutes, until chicken is cooked through and juices run clear.
  8. Garnish with chopped cilantro or parsley before serving hot.
