- 2 tablespoons Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 1 teaspoon Paprika
- 1/2 cup Honey
- 1/4 cup White Wine
- 1 medium Onion
- 2 pieces Fresh Lemons
- 1/2 cup Nicoise Olives
- 2 tablespoons Cilantro or Parsley
Instructions
- Preheat oven to 375°F (190°C).
- Sauté olive oil in a Dutch oven over medium-high heat. Add onions and cook until golden brown, then set aside.
- Season chicken pieces with salt, pepper, and paprika. Brown them in the same pot for 5-7 minutes, then set aside.
- Layer cooked onions in a roasting pan, then place chicken skin-side up on top.
- Smear honey generously over chicken pieces. Mix leftover honey with white wine and bring to a boil to create a glaze.
- Pour the honey-wine mixture over chicken, then add lemon slices and olives.
- Bake uncovered for about 40 minutes, until chicken is cooked through and juices run clear.
- Garnish with chopped cilantro or parsley before serving hot.
