- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 1/4 teaspoon salt
- 1/4 cup granulated sugar
- 3 large eggs
- 3/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/4 cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, butter, powdered sugar, and salt until it forms a dough.
- Press the dough into a tart pan and chill for 30 minutes.
- Bake the crust for 20 minutes or until golden brown.
- In another bowl, whisk together granulated sugar, eggs, lemon juice, lemon zest, and heavy cream.
- Pour the lemon filling into the crust and bake for an additional 20 minutes.
- Allow to cool, then chill in the refrigerator before serving.
