Ingredients

  • 75 g (3/4 cup) unsweetened cocoa powder
  • 300 g (1 1/2 cups) granulated sugar
  • 2 tsp (10 g) baking soda
  • 1/2 tsp (2 g) baking powder
  • 1 tsp (6 g) fine salt
  • 3 large eggs (about 150 g total)
  • 240 ml (1 cup) full-fat mayonnaise
  • 240 ml (1 cup) hot coffee or hot water
  • 2 tsp (10 ml) vanilla extract
  • 100 g (3/4 cup) semisweet chocolate chips (optional)

Instructions

  1. Preheat the oven to 175°C (350°F) and prepare a 9-inch round cake pan with grease and parchment.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking soda, baking powder, and salt until combined.
  3. In a separate bowl, beat the eggs and whisk in mayonnaise and vanilla. Slowly add hot coffee while whisking.
  4. Pour the wet mixture into the dry ingredients and fold gently until combined. Avoid overmixing.
  5. If using, fold in chocolate chips and transfer the batter to the prepared pan.
  6. Bake for 30-35 minutes, checking for doneness with a toothpick.
  7. Cool in the pan for 10-15 minutes, then invert onto a rack to cool completely.
  8. Serve plain or frost with chocolate ganache or cream filling if desired.
