- 250 g (2 cups) all-purpose flour
- 75 g (3/4 cup) unsweetened cocoa powder
- 300 g (1 1/2 cups) granulated sugar
- 2 tsp (10 g) baking soda
- 1/2 tsp (2 g) baking powder
- 1 tsp (6 g) fine salt
- 3 large eggs (about 150 g total)
- 240 ml (1 cup) full-fat mayonnaise
- 240 ml (1 cup) hot coffee or hot water
- 2 tsp (10 ml) vanilla extract
- 100 g (3/4 cup) semisweet chocolate chips (optional)
Instructions
- Preheat the oven to 175°C (350°F) and prepare a 9-inch round cake pan with grease and parchment.
- In a large bowl, whisk together flour, cocoa powder, sugar, baking soda, baking powder, and salt until combined.
- In a separate bowl, beat the eggs and whisk in mayonnaise and vanilla. Slowly add hot coffee while whisking.
- Pour the wet mixture into the dry ingredients and fold gently until combined. Avoid overmixing.
- If using, fold in chocolate chips and transfer the batter to the prepared pan.
- Bake for 30-35 minutes, checking for doneness with a toothpick.
- Cool in the pan for 10-15 minutes, then invert onto a rack to cool completely.
- Serve plain or frost with chocolate ganache or cream filling if desired.

Ensure to measure flour by weight for best results and avoid overmixing to keep the cake tender.
