- 1 cup all-purpose flour
- 1/2 cup unsalted butter
- 1 cup water
- 4 large eggs
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup white chocolate, chopped
- 1–2 tbsp gold luster dust
Instructions
- Preheat your oven to 400°F (200°C).
- In a saucepan, combine water and butter. Bring to a boil.
- Stir in flour until it forms a ball of dough.
- Remove from heat and incorporate eggs one at a time until smooth.
- Pipe dough onto a baking sheet and bake for 25 minutes. Let cool.
- Whip heavy cream with powdered sugar and vanilla until stiff peaks form.
- Fill éclairs with the whipped cream.
- Melt white chocolate and mix with gold luster dust to create the glaze.
- Dip the tops of filled éclairs into the gold glaze and let set.
- Serve alongside champagne.
Notes
For best texture, fill and glaze éclairs just before serving. Éclairs can be made ahead of time by freezing unfilled shells.
