New Year’s Eve Éclairs with Gold Glaze

Description

Elegant and customizable éclairs filled with silky cream and topped with a stunning gold glaze, perfect for your New Year’s Eve celebration.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter
  • 1 cup water
  • 4 large eggs
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup white chocolate, chopped
  • 12 tbsp gold luster dust

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a saucepan, combine water and butter. Bring to a boil.
  3. Stir in flour until it forms a ball of dough.
  4. Remove from heat and incorporate eggs one at a time until smooth.
  5. Pipe dough onto a baking sheet and bake for 25 minutes. Let cool.
  6. Whip heavy cream with powdered sugar and vanilla until stiff peaks form.
  7. Fill éclairs with the whipped cream.
  8. Melt white chocolate and mix with gold luster dust to create the glaze.
  9. Dip the tops of filled éclairs into the gold glaze and let set.
  10. Serve alongside champagne.

Notes

For best texture, fill and glaze éclairs just before serving. Éclairs can be made ahead of time by freezing unfilled shells.
