- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar

- 1 cup heavy whipping cream
- 2 cups fresh strawberries, sliced
Instructions
- In a medium bowl, mix graham cracker crumbs and melted butter until combined. Press this mixture into the bottom of a 9-inch springform pan to form the crust. Refrigerate while preparing the filling.
- In a large bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth.
- In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until just combined.
- Fold in the sliced strawberries.
- Pour the cheesecake filling over the crust and smooth the top.
- Cover and refrigerate for at least 240 minutes or until set.
- Serve chilled, topped with extra sliced strawberries or a drizzle of chocolate.
