Ingredients

- 250 g (2 cups) pasta (penne or spaghetti)
- 300 g (1 large bunch) fresh spinach
- 240 ml (1 cup) heavy cream
- 4 cloves garlic
- 50 g (½ cup) freshly grated Parmesan cheese
- 30 ml (2 tablespoons) extra virgin olive oil
- Salt and pepper to taste
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, about 8-10 minutes.
- Prepare the spinach: Heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute, then add fresh spinach and cook until wilted, about 3-4 minutes.
- Blend the spinach sauce: Transfer the cooked spinach and garlic to a blender. Add heavy cream and blend until smooth. If desired, blend in the grated Parmesan cheese just until combined.
- Combine pasta and sauce: Reserve some pasta cooking water, then drain the pasta. Add the spinach sauce to the pasta, stirring well and adjusting with reserved cooking water for desired creaminess.
- Serve: Season with salt and pepper to taste and serve immediately, garnished with extra Parmesan if desired.
Notes
For a lighter version, you can substitute heavy cream with low-fat or plant-based alternatives. You may add different vegetables or proteins based on your preferences.
