- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 (8-ounce) packages cream cheese, softened
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups fresh peaches, peeled and sliced
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 350°F (175°C).
- Combine graham cracker crumbs and melted butter in a bowl. Press the mixture into the bottom of a greased 9×13 inch baking dish.
- Beat the cream cheese and sugar in a mixing bowl until creamy. Add the eggs and vanilla, mixing until smooth.
- Pour the cheesecake mixture over the crust in the baking dish.
- Combine sliced peaches, brown sugar, cinnamon, and lemon juice in another bowl. Spread the peach mixture over the cheesecake layer.
- Bake for 30-35 minutes, or until set.
- Let cool, then refrigerate before cutting into bars. Serve chilled.
Notes
For an added crunch, sprinkle chopped pecans or walnuts over the peach layer before baking. Store bars in the refrigerator for up to a week or freeze for two months.
