Description

A delightful twist on classic potato salad, featuring dill pickles and crispy bacon for a tangy and creamy side dish.


Ingredients

  • 2 pounds potatoes
  • 1 cup beef bacon, cooked and chopped
  • 1 cup dill pickles, diced
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon Dijon mustard
  • 2 tablespoons fresh dill, chopped
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in salted water until tender. Drain and let cool before dicing.
  2. In a large bowl, combine the diced potatoes, chopped beef bacon, and diced pickles.
  3. In a separate bowl, mix together the mayonnaise, sour cream, Dijon mustard, chopped dill, salt, and pepper.
