- 8 corn or flour tortillas
- 2 cups enchilada sauce
- 1 cup shredded Monterey Jack cheese
- 1 small onion, diced
- 1 bell pepper, diced
- 1 tsp cumin
- 1 tsp chili powder
- Fresh cilantro (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Sauté diced onion and bell pepper in a skillet over medium heat until soft, about 5 minutes. Add ground turkey and cook until browned.
- Stir in cumin, chili powder, and half of the enchilada sauce; mix well.
- Spoon turkey mixture into each tortilla, roll tightly, and place seam-side down in a baking dish.
- Pour remaining enchilada sauce over the rolled tortillas and top with shredded cheese.
- Bake for 20-25 minutes until the cheese is bubbly and golden brown.
