- 2 lbs baby potatoes
- 1 cup grated Parmesan cheese
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Wash and halve the baby potatoes.
- Mix olive oil, Parmesan cheese, garlic, oregano, salt, and pepper in a bowl.
- Add the potatoes to the mixture and toss until well coated.
- Place the coated potatoes in the crockpot and cook on low for 240-300 minutes or until tender.
- Garnish with fresh parsley before serving.
Notes
For extra flavor, consider adding herbs like rosemary or thyme. For a crispier texture, finish under the broiler.
