- 2 pounds potatoes, peeled and sliced
- 2 large onions, thinly sliced
- 3 tablespoons butter
- 1 cup shredded cheese (Gruyère or Swiss)
- 1 cup vegetable broth
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, melt butter over medium heat and add onions. Sauté until caramelized, about 20 minutes.
- In a baking dish, layer half of the potatoes, then half of the caramelized onions, and half of the cheese.
- Repeat the layers, finishing with cheese on top.
- Pour vegetable broth over the layered potatoes.
- Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until the top is golden and bubbly.
- Garnish with fresh parsley before serving.
Notes
For extra flavor, consider adding thyme or garlic among the layers.
