French Onion Potatoes

Description

A delightful side dish featuring creamy potatoes topped with caramelized onions and melted cheese, offering a comforting blend of flavors.


Ingredients

  • 2 pounds potatoes, peeled and sliced
  • 2 large onions, thinly sliced
  • 3 tablespoons butter
  • 1 cup shredded cheese (Gruyère or Swiss)
  • 1 cup vegetable broth
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, melt butter over medium heat and add onions. Sauté until caramelized, about 20 minutes.
  3. In a baking dish, layer half of the potatoes, then half of the caramelized onions, and half of the cheese.
  4. Repeat the layers, finishing with cheese on top.
  5. Pour vegetable broth over the layered potatoes.
  6. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until the top is golden and bubbly.
  7. Garnish with fresh parsley before serving.

Notes
