Ingredients

Scale
  • 8 ounces pasta (linguine or fettuccine)
  • 1 pound shrimp (peeled and deveined)
  • 2 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add the shrimp to the skillet and cook until pink and opaque, about 2-3 minutes per side.
  4. Stir in the diced tomatoes (with juices) and heavy cream; bring to a simmer.
  5. Add the Parmesan cheese and stir until melted and combined.
  6. Season with salt and pepper to taste.
  7. Toss the cooked pasta with the shrimp and sauce until well coated.
  8. Serve garnished with fresh parsley.

Notes

Use fresh shrimp for the best flavor. Consider adding spinach or peas for extra greens.
