- 2 cups fresh or frozen cherries
- 1 cup water
- 1/2 cup erythritol or preferred sugar substitute
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
Instructions
- Combine the cherries and water in a saucepan. Bring to a boil, then reduce heat and simmer for about 10 minutes until the cherries are soft.
- Remove from heat and strain the mixture, pressing the cherries to extract as much juice as possible.
- Add erythritol, lemon juice, and vanilla extract to the cherry juice. Stir until the sweetener is dissolved.
- Return the mixture to the saucepan and cook on low heat for an additional 5 minutes to thicken.
- Allow to cool before storing in a jar.

Store your homemade syrup in an airtight jar in the refrigerator for up to two weeks.
