A delicious and easy pasta dish combining roasted tomatoes, garlic, and creamy ricotta cheese, perfect for a weeknight dinner.

- 8 oz pasta (your choice)
- 2 cups cherry tomatoes
- 4 cloves garlic, minced
- 1 cup ricotta cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Toss cherry tomatoes and minced garlic with olive oil, salt, and pepper in a baking dish. Roast in the oven for 20 minutes.
- Cook the pasta according to package directions until al dente.
- Reserve 1/2 cup of pasta water, then drain the pasta.
- Combine the cooked pasta, roasted tomatoes and garlic, and ricotta cheese in a large bowl. Mix well, adding reserved pasta water as needed to create a creamy sauce.
- Serve warm, garnished with fresh basil if desired.
