These smoky pulled jackfruit sandwiches are a delicious and easy vegan BBQ recipe, perfect for any meal.

- 2 cans young green jackfruit in water
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 cup BBQ sauce
- Salt and pepper to taste
- 4 whole grain burger buns
- Coleslaw for topping (optional)
Instructions
- Drain and rinse the jackfruit. Cut the jackfruit into smaller pieces.
- Heat the olive oil in a pan over medium heat. Cook the diced onion until translucent.
- Add the minced garlic and cook for another minute.
- Stir in the jackfruit and cook for about 5 minutes.
- Mix in the BBQ sauce and season with salt and pepper. Let simmer for 20 minutes.
- Shred the jackfruit using two forks to create a pulled texture.
- Toast the burger buns and fill them with the pulled jackfruit.
- Top with coleslaw if desired and serve immediately.
Notes
For a spicier version, add some cayenne pepper to the jackfruit while cooking.
