These smoky pulled jackfruit sandwiches are a delicious and easy vegan BBQ recipe, perfect for any meal.


Ingredients

  • 2 cans young green jackfruit in water
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup BBQ sauce
  • Salt and pepper to taste
  • 4 whole grain burger buns
  • Coleslaw for topping (optional)

Instructions

  1. Drain and rinse the jackfruit. Cut the jackfruit into smaller pieces.
  2. Heat the olive oil in a pan over medium heat. Cook the diced onion until translucent.
  3. Add the minced garlic and cook for another minute.
  4. Stir in the jackfruit and cook for about 5 minutes.
  5. Mix in the BBQ sauce and season with salt and pepper. Let simmer for 20 minutes.
  6. Shred the jackfruit using two forks to create a pulled texture.
  7. Toast the burger buns and fill them with the pulled jackfruit.
  8. Top with coleslaw if desired and serve immediately.

Notes

For a spicier version, add some cayenne pepper to the jackfruit while cooking.
